Bagels -easy-peasy
 
    Ingredients
      7gr dried yeast
        4 tbsp sugar
        2 tsp salt
     450gr bread flour

Method

  1. Tip the yeast and 1 tbsp sugar into a large bowl, and pour over 100ml warm water. Leave for 10 mins until the mixture becomes frothy.
  2. Pour 200ml warm water into the bowl, then stir in the salt and half the flour. Keep adding the remaining flour (you may not have to use it all) and mixing with your hands until you have a soft, but not sticky dough. Then knead for 10 mins until the dough feels smooth and elastic. Shape into a ball and put in a clean, lightly oiled bowl. Cover loosely with cling film and leave in a warm place until doubled in size, about 1hr.
  3. Heat oven to 220C/fan 200C/gas 7. On a lightly floured surface, divide the dough into 10 pieces, each about 85g. Shape each piece into a flattish ball, then take a wooden spoon and use the handle to make a hole in the middle of each ball. Slip the spoon into the hole, then twirl the bagel around the spoon to make a hole about 3cm wide. Cover the bagel loosely with cling film while you shape the remaining dough.
  4. Meanwhile, bring a large pan of water to the boil and tip in the remaining sugar. Slip the bagels into the boiling water - no more than four at a time. Cook for 1-2 mins, turning over in the water until the bagels have puffed slightly and a skin has formed. Remove with a slotted spoon and drain away any excess water. Sprinkle over your choice of topping and place on a baking tray lined with parchment. Bake in the oven for 25 mins until browned and crisp - the bases should sound hollow when tapped. Leave to cool on a wire rack, then serve with your favourite filling.

    CRUMPETS 


    mix
    300gr plain flour
    1 teaspoon caster sugar
    7gr dried yeast

    stir in
    200ml tepid milk
    200ml soda water

    whisk until smooth.
    cover bowl with cling wrap and leave until doubled in size (approx 11/2 hours
    add 1/2 teaspoon bicarb
    1 teaspoon salt.

     BANANA POORIS                                                                         




    Ingredients:
    • 2 cups whole wheat flour
    • 1 large or 2 small over ripe bananas
    • pinch of salt 
    • pinch of ground cinnamon

    Method:
    • mash banana
    • in a large bowl mix flour and a pinch of salt
    • slowly add enough water to make a fairly stiff dough
    (knead as you go and if it gets sticky add a bit more flour)
    • add the banana and grated nutmeg and knead until well combined.
    • divide mixture into plum sized balls
    • roll each ball out into a circle about the size of the palm of your hand
    • deep fry a few at a time until puffed and golden, drain on paper towel and dredge with sugar and maybe a dollop of cream or yogurt

    This Weeks Discovery   

           CHOCOLATE-CHERRY-ALMOND CAKE   (Probably of German Origin)

    I warn you this is very more-ish, but really a small slice is most satisfying.  Makes a great dinner party desert with a dob of thick cream or ice cream.  Definitely to be eaten in style with a pastry fork, use  fine china plates and napkins.....  a pot of Earl Grey tea will not go amiss and don't forget the sugar cubes and tongs.


    Ingredients:
    200gr butter                                                          2-3 tablespoons rum                  
    200gr castor sugar                                                1 teaspoon ground cinnamon
    4 eggs                                                                   1 teaspoon baking powder
    20 gr ground almonds                                           75gr wholemeal plain flour
    100gr grated dark cooking chocolate                    750gr jar of sour cherries (drained)



    Preheat oven 175 C
    Grease and line a spring form cake tin
    Beat butter and sugar until light and creamy
    Add eggs slowly continuing to beat until light and creamy
    Add almonds chocolate rum and cinnamon

    In a separate bowl sift flour and baking powder. then fold in the butter mixture.
    Fold in cherries
    Spoon into tin and level the surface.
    Bake approx 45 minutes or until a wooden skewer inserted into the centre comes out clean.
    turn onto a rack to cool then dust with icing sugar.

    Drop Dead Easy Muffins
    1 cup milk
    2 tablespoons margarine or oil      
    1 egg
    1 teaspoon vanilla

    give the above a whirl in the blender then pour into bowl containing
    21/2 cups SR flour
    3/4 cup brown sugar

    spoon into muffin tins and bake at 180C for 25 minutes
    (You could add choc chips to this)
